For the filling:

  • 8 large fresh peaches, peeled, pitted, and sliced
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

For the topping:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water

Additional topping:

  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon


  1. Preheat your oven to 425°F (220°C).
  2. Peel, remove pits, and slice the fresh peaches. Add them to a large mixing bowl.
  3. Sprinkle brown sugar, sugar, cinnamon, cornstarch, lemon juice, and nutmeg over the peaches. Stir until the peaches are coated.
  4. Pour the peach mixture into an ungreased 9×13 baking dish.
  5. Bake for 10 minutes, then remove the dish from the oven.
  6. In a medium mixing bowl, whisk together flour, sugar, brown sugar, baking powder, and salt.
  7. Using a pastry blender, mix the butter into the flour mixture until it becomes crumbly.
  8. Pour in the boiling water and stir until the mixture is combined.
  9. Spoon the topping mixture over the peaches and spread it gently to cover them.
  10. In a small bowl, mix organic sugar and cinnamon together and sprinkle this mixture on top of the cobbler.
  11. Bake for approximately 35 minutes or until the topping is golden brown.
  12. Top each serving with dairy-free vanilla ice cream or your ice cream of choice.
  13. This Fresh Peach Cobbler is best served warm. Enjoy the wonderful flavors of ripe peaches in this delightful dessert!
